Healthy bodies produce both acids and alkalines to assist our daily digestion - we need both, but we need them in the correct balance. If that all-important balance is lost, usually through eating too many acid-forming foods, the body must work very hard to regain it, even at the cost of drawing calcium out of our bones to buffer the excess acid. And as the acidity levels in our body rise, toxicity rises too.
A diet that is rich in fruit, vegetables and neutral grains such as rice and millet, together with plenty of water, is essential to restoring a good pH, while meat, dairy, pulses and most cereals are acid-forming and need to be eaten in smaller quantities. We need roughly four times as much alkalising food as acid-forming food in our daily diet to keep ourselves on track.
