The sea provides us with an abundance of wild foods. However, it's increasingly important to source these foods from clean seas. This Flaky Sea Salt, sustainably harvested from the clean, mineral-rich seas off the coast of New Zealand, is a perfect example.

Unlike many processed table salts, it contains naturally occurring trace elements and minerals like calcium and magnesium. The salt is very dry and has an intense flavour. The soft flakes combine well with food which makes it an excellent ingredient for gourmet cooking.

Digestion, nerve and muscle function rely on salt to work effectively, so natural sea salt can contribute to a balanced diet. You don't need much, so if you use a good quality salt a little goes a long way.

Grower's Story

We get our salt from Lake Grassmere, a lagoon which was formed 1,800 years ago. The prevailing wind is a strong, dry 'north-westerly' which creates the ideal conditions for natural salt production.

It takes a full year for the sea water to evaporate naturally in the sun and harvesting takes place in late summer. The salt brine is then slowly evaporated by a gentle heat until it is transformed into unique pyramid shaped crystals. These crystals are then air-dried before being screened, graded and packed. The result is a pure, natural sea salt that is very light and flaky.
