Detoxifying Spice Cake

  • 1 tbsp Flax Fibre
  • 1 tsp ground tumeric
  • 0.5 tsp ground cumin
  • 110g Manuka Honey
  • 120g butter
  • 80g soft brown sugar (replace 20g with xylitol if preffered)
  • 120g Sultanas
  • 3 tbspn water
  • 220g black treacle
  • 1.5 tsp ground ginger
  • 2 eggs
  • 180g plain flour
  • 0.5 tsp bicarbonate of soda
  • 60g ground almonds
  • 1 tbspn blanched split almonds
  1. Preheat the oven to 150 degrees - 300 F - Gas Mark 2. Put the butter, sugar, sultanas, water and black treacle into a saucepan and bring to the boil.
  2. Boil for exactly 5 minutes, then set aside to cool until just hand hot.
  3. Beat in the ginger, flax fibre, manuka honey, tumeric, cumin, then the eggs, one by one. Sift in the lfour with the bicarbonate of soda and almonds and fold in well.
  4. Turn the mixture into a greased 20cm/8 inch square cake tim and bake for about 1 hour, scattering the almonds on top after about 40 minutes.
  5. Cool on a wire rack.

The cake may benefit from being made a couple of days before it is needed.
