
Midsummer Cake
Midsummer Cake (Based on a Waitrose Recipe)
- 175g butter
- 150g caster sugar
- 75g Manuka Honey
- 3 medium eggs, beaten
- 150g polenta
- 100g ground almonds
- 2 tsp baking powder
- 250g raspberries
- 250g blueberries
- 10g Dried Blackcurrants, presoaked
- Zest of 1 lemon and juice of ½
- 2-3 drops almond essence
- Cream the butter and sugar; add the egg and polenta and beat well.
- Stir in ground almonds, almond essence and baking powder.
- Fold in blackcurrants and half the fresh fruit with the lemon zest.
- Spoon the mixture into a 24cm square cake tin and bake for 30-35 minutes.
- Heat the honey and lemon juice, making small holes in the top of the cake with a skewer and pour the mixture over while the cake is still hot.
- Sprinkle the remaining fruit over the top.
