Midsummer Cake

Midsummer Cake (Based on a Waitrose Recipe)

  • 175g butter
  • 150g caster sugar
  • 75g Manuka Honey
  • 3 medium eggs, beaten
  • 150g polenta
  • 100g ground almonds
  • 2 tsp baking powder
  • 250g raspberries
  • 250g blueberries
  • 10g Dried Blackcurrants, presoaked
  • Zest of 1 lemon and juice of ½
  • 2-3 drops almond essence

 

  1. Cream the butter and sugar; add the egg and polenta and beat well.
  2. Stir in ground almonds, almond essence and baking powder.
  3. Fold in blackcurrants and half the fresh fruit with the lemon zest.
  4. Spoon the mixture into a 24cm square cake tin and bake for 30-35 minutes.
  5. Heat the honey and lemon juice, making small holes in the top of the cake with a skewer and pour the mixture over while the cake is still hot.
  6. Sprinkle the remaining fruit over the top.
