
Best Bean Bake
- 2 tins beans – kidney, black, cannellini etc or about 400g cooked beans
- 2 onions, chopped
- 1 clove garlic, crushed
- 1 fresh chilli
- 1 tin chopped tomatoes
- 1 tbsp tamari
- Pinch of Kelp
- 2 tsp vegetable bouillon powder
- 200g mushrooms, sliced
- 1 red pepper, chopped
- 1 leek, sliced
- Olive oil
- For the topping:
- 100g grated cheddar
- 2 tbsp Flax Fibre
- 3 tbsp oats
- 1 tbsp walnuts, chopped
- A large cooking apple, grated
- 1 tsp wholegrain mustard (optional)
- 1 tblsp sunflower oil
- Sautee onions, garlic and chilli, then add bouillon powder, tamari,kelp and tomatoes.
- Add chopped vegetables and cook until soft.
- Add the beans and tip into an ovenproof dish.
- For the topping, mix ingredients together, then sprinkle crumble topping over and bake at 200 C until golden brown.
- Serve with a green salad dressed with Green Bay Salad Dressing.
