Best Bean Bake

  • 2 tins beans – kidney, black, cannellini etc or about 400g cooked beans
  • 2 onions, chopped
  • 1 clove garlic, crushed
  • 1 fresh chilli
  • 1 tin chopped tomatoes
  • 1 tbsp tamari
  • Pinch of Kelp
  • 2 tsp vegetable bouillon powder
  • 200g mushrooms, sliced
  • 1 red pepper, chopped
  • 1 leek, sliced
  • Olive oil

  • For the topping:
  • 100g grated cheddar
  • 2 tbsp Flax Fibre
  • 3 tbsp oats
  • 1 tbsp walnuts, chopped
  • A large cooking apple, grated
  • 1 tsp wholegrain mustard (optional)
  • 1 tblsp sunflower oil

 

  1. Sautee onions, garlic and chilli, then add bouillon powder, tamari,kelp and tomatoes.
  2. Add chopped vegetables and cook until soft.
  3. Add the beans and tip into an ovenproof dish.
  4. For the topping, mix ingredients together, then sprinkle crumble topping over and bake at 200 C until golden brown.
  5. Serve with a green salad dressed with Green Bay Salad Dressing.
