Broccoli Muffins

Muffins are filling and easy to make; try these with soups and salads as an alternative to sweet ones.

  • 200g Broccoli
  • 2 eggs
  • 200ml milk
  • 100g grated cheese
  • 60g plain flour
  • 60g Flax Fibre
  • 50g polenta
  • 2 tsp baking powder
  • Pinch Kelp
  • Nutmeg, black pepper

 

  1. Preheat the oven to 200 C.
  2. Chop the broccoli and steam for about five minutes; drain and allow to cool.
  3. Mix the milk, eggs and cheese and add to broccoli.
  4. Combine the flours, fibre and baking powder and add to broccoli mixture with spices to taste.
  5. Spoon the mixture into 12 greased muffin tins and cook for about 20 minutes.
  6. Alternatives: add cooked sweetcorn kernels, chopped red pepper, a little fresh chilli or fresh herbs.
