Ginger and Cardomom Muffins
1 cup caster sugar (or fructose)
2 cup flour
¼ cup Flax Fibre LSA
1 ½ tsp baking soda
2 tsp ground ginger
1 tsp ground cardamon
100g butter
2 eggs
2 tbsp honey
1 cup milk
Mix together dry ingredients
Melt butter and honey
Cool, then add milk and eggs (beaten)
Blend lightly
Spoon mixture into prepared muffin trays
Bake at 200°C for about 12 minutes
