Ginger and Cardomom Muffins

  • 1 cup caster sugar (or fructose)
  • 2 cup flour
  • ¼ cup Flax Fibre LSA
  • 1 ½ tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cardamon
  • 100g butter
  • 2 eggs
  • 2 tbsp honey
  • 1 cup milk

 

  1. Mix together dry ingredients
  2. Melt butter and honey
  3. Cool, then add milk and eggs (beaten)
  4. Blend lightly
  5. Spoon mixture into prepared muffin trays
  6. Bake at 200°C for about 12 minutes
