Green Bay Flax Muffins

  1. Preheat the oven to 180 C/gas mark 4.
  2. Mix flours, flax fibre, sugar, baking powder, salt and cinnamon.
  3. Add carrots, raisins and walnuts.
  4. Mix eggs, milk and vanilla in a separate bowl, then add to dry ingredients.
  5. Spoon batter in to lightly greased muffin tins.
  6. Bake for approximately 20 minutes, until golden brown.
