Apple and Flax Pancakes

(Makes about 12)

  • 1 cup flour
  • 1/3 cup Flax Fibre
  • 2 Tbsp sugar (Xylitol or another sweetener)
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • dash of nutmeg
  • 2 eggs separated (whites beaten stiffly)
  • 1 ¼ cup milk
  • 3 Tbsp melted butter
  • 1 cup grated apples (skinned and cored)

 

  1. Combine dry ingredients
  2. Beat together egg yolks, milk and melted butter
  3. Add to dry ingredients
  4. Combine until it becomes a pouring texture - add more milk if necessary
  5. Grate apple and add to batter
  6. Stir to combine
  7. Fold in egg whites
  8. Pre-heat pan
  9. Pour batter into pan in 1/3 cup measures
  10. Cook until bubbles appear in surface, turn over and cook until lightly browned
