Welsh Leeks with Manuka Honey

A soothing side dish to aid recovery.

  • 1 large Welsh leek
  • 25g butter
  • A dash of chilli oil
  • 1 tbsp lemon juice
  • 1 tbsp Manuka Honey

 

  1. Cut a large, washed leek into 1 cm rings. Separate the layers until you have a large heap of rings.
  2. In a large frying pan, over a moderate heat melt the butter and add a drop of water to the pan.
  3. Tip in the leeks, add the lemon juice and honey – sprinkle with chilli oil.
  4. Toss gently and cook for 3 minutes, taking care not to overcook.
